Why homemade pizza is worth making
Homemade pizza from scratch needs only four dough ingredients — flour, water, salt and yeast — yet it tastes nothing like a frozen base. You control the flour, the fermentation and the toppings, and a basic batch costs a fraction of a takeaway.
It is also easier than it looks. The work itself is about 20 minutes; the rest is waiting while the dough rises. This easy homemade pizza recipe is built for an ordinary home oven, not a wood-fired one.
Ingredients and what each one does
- Flour — builds the structure. 00 or bread flour gives a stretchy homemade pizza crust. Read more in the 00 flour guide.
- Water — hydrates the flour and controls softness. This recipe uses 65%, easy to handle by hand. See pizza dough hydration.
- Salt — seasons the dough and tightens the gluten so it holds its shape.
- Yeast — produces the gas that puffs the rim. A small amount and more time gives better flavour than a lot of yeast and a quick rise.
- Tomato, mozzarella, olive oil and basil — the classic toppings. Quality matters more than quantity; see Neapolitan pizza ingredients.
How to make homemade pizza dough step by step

1. Mix
Dissolve the yeast in lukewarm water, add most of the flour and stir to a thick batter. Add the salt and the remaining flour and mix until there is no dry flour left.
2. Knead
Knead on the counter for 8–10 minutes. The dough is ready when it is smooth, springs back slowly when pressed, and feels slightly tacky but does not stick to your hands.
3. Rise
Cover the bowl and let the dough rise for about 2 hours at room temperature, until it has roughly doubled. In a cold kitchen it may take longer — go by look, not the clock.
4. Ball and rest
Divide into four 250 g pieces, fold the edges underneath to make tight balls, then cover and rest for 2 more hours. Want exact grams for a different batch size? Use the pizza dough calculator.
Shaping, topping and baking your pizza

Set the dough ball on a floured counter and press from the centre outwards with your fingertips, leaving a 1.5–2 cm border. Lift it over your knuckles and rotate to stretch it to 28–30 cm. A rolling pin flattens the air bubbles that make the rim light — the stretching guide shows each move.

Lay the base on a floured peel, spread a thin layer of tomato, add torn, well-drained mozzarella and a drizzle of oil. Top quickly so the dough does not stick, then slide it onto the preheated steel or stone and bake for 6–8 minutes.
Tips for a crisp homemade pizza crust
- Preheat a pizza steel or stone for 45–60 minutes — the hot surface is what crisps the base. Compare them in pizza steel vs stone.
- Keep sauce thin and drain mozzarella on paper for 30 minutes.
- Use semolina or a light dusting of flour on the peel, not cornmeal by the handful.
- Finish under the broiler for 30–60 seconds if the top is pale.
- Do not overload toppings — three or four ingredients are plenty.
Oven temperature guidance
Bake homemade pizza as hot as your oven allows: 250–290 °C (480–550 °F) on the top shelf with a steel or stone. At 250 °C expect around 8 minutes; at 290 °C closer to 5–6. A dedicated pizza oven at 430–480 °C bakes in 60–90 seconds and calls for a softer dough — see Neapolitan pizza in a home oven for the adjustments.
Topping ideas for homemade pizza
- Margherita — tomato, mozzarella, basil and olive oil.
- Marinara — tomato, garlic, oregano and olive oil, no cheese.
- Mushroom and sausage — pre-cook the mushrooms so they do not release water.
- Spicy salami with a drizzle of honey after baking.
- White pizza — mozzarella, ricotta, garlic and lemon zest.
Storage and make-ahead advice
Dough: refrigerate balled dough in covered, lightly oiled containers for up to 48 hours, or freeze for up to 3 months. The cold ferment guide explains the 24, 48 and 72-hour options.
Baked pizza: cool, wrap and refrigerate for up to 3 days. Reheat in a hot dry pan with a lid for a few minutes to bring back the crisp base.
Frequently asked questions
What is the best flour for homemade pizza dough?
Italian 00 flour with around 12–13% protein gives a soft, elastic dough that stretches thin. Bread flour works well too, especially in a home oven, and gives a slightly chewier crust. All-purpose flour works but tears more easily.
Can I make homemade pizza dough the day before?
Yes. After mixing, ball the dough, place it in lightly oiled covered containers and refrigerate for 24–48 hours. Take it out 2–3 hours before baking so it warms up and relaxes. Cold fermentation also adds flavour.
Why is my homemade pizza crust not crispy?
Usually the oven or baking surface is not hot enough, or the toppings are too wet. Preheat a steel or stone for at least 45 minutes at maximum temperature, drain the mozzarella and use a thin layer of sauce.
What temperature should I bake homemade pizza at?
As hot as your oven goes — typically 250–290 °C (480–550 °F) in a home oven. Higher heat bakes faster, which keeps the crust crisp outside and soft inside.
Can I freeze homemade pizza dough?
Yes. Freeze individual oiled dough balls in sealed bags for up to 3 months. Thaw overnight in the fridge, then rest at room temperature for 2–3 hours before stretching.
